The dish: It’s rare a place tries to be many things to many people and pulls it off, but Quantum does. It’s a lounge, with hip music, a cool setting, and great cocktails. It’s a place to nosh, with terrific fries and other fried things (calamari and rock shrimp, say). It’s a place to get one of S.B.’s best burgers, and you can build your own. For those of you who want a bigger, fuller, fancier meal, kick it off with foie gras, enjoy that duck two ways with a seared breast and leg confit, and close with a spiked milkshake. The wine list not only offers many faves from over the Santa Ynez Mountains but surprises, too, like Jim Clendenen’s racy gewürztraminer, One Spicy Meatball. Add in some of the best service in town — just the right blend of friendly, attentive, helpful, and absent so you have your good time — and you’ve got a restaurant that’s perfectly pleasing.
